Cannellini Beans
This bean is a traditional white Italian bean. It is an haricot bean
that was originally cultivated in Argentina but became an Italian
stalwart, widely used in their cuisine around the world. This
variety has a very smooth texture with an elusive nutty flavor.

Basic Bean Cooking Instructions
Pick over beans and rinse thoroughly in cold water. Place
cleaned beans in a bowl of fresh cold water, cover and soak for
3 to 8 hours or overnight at room temperature; drain and rinse
well. Or place beans in a saucepan with water of cover, bring to
a boil, remove from the heat , and soak for 1 1/2 hours, drain
and rinse well. Cook beans by covering with 2" of water,
simmering 1 to 2 hours or until tender depending on size of the
bean.
Cannellini Beans
A
warm salad of white beans and smoked
mussels in a vinaigrette with red onion
2 cups cooked Cannellini Beans
3/4 cup smoked mussels
Extra virgin olive oil
Salt & Pepper
Red wine vinegar
Assorted salad greens
Red onion slices
Sauté beans and mussels gently in olive oil. Season with
salt and pepper and moisten with a few drops of vinegar.
Mix and serve on the salad greens.
Garnish with sliced red onion.
You may substitute cooked shrimp or duck comfit for
the smoked mussels.
