Dapple Greys
- Ranch Style
1 lb. Dapple Grey Beans
1 lb. Smoked Bacon,
chopped
1 large Onion, chopped
1 Tbsp. ground Cumin
2 cups Orange Juice
1 Tbsp. minced canned
chipotle chilies
1 large Onion, thinly
sliced
Clean and wash beans, soak overnight. Cook bacon
in large pot until crisp. Remove bacon to paper towel. Save 3 Tbsp.
bacon grease in small bowl. Cook onion and cumin in remaining bacon
grease for 5 min. Stir in juice and chilies, boil 5 min. Add beans
and soaking water; bring to boil.
Cove and reduce heat to medium and simmer about 2
hours. Uncover and simmer until beans are tender and thick. Stir in
bacon. Combine reserved drippings and sliced onions in skillet.
Sauté until brown. Serve over beans, Season to taste with Sea Salt
and or Peppercorns.

Basic Bean Cooking Instructions
Pick over beans and rinse thoroughly in cold water. Place
cleaned beans in a bowl of fresh cold water, cover and soak for
3 to 8 hours or overnight at room temperature; drain and rinse
well. Or place beans in a saucepan with water of cover, bring to
a boil, remove from the heat , and soak for 1 1/2 hours, drain
and rinse well. Cook beans by covering with 2" of water,
simmering 1 to 2 hours or until tender depending on size of the
bean.
