Basic Bean Cooking Instructions
Pick over beans and rinse thoroughly in cold water. Place
cleaned beans in a bowl of fresh cold water, cover and soak for
3 to 8 hours or overnight at room temperature; drain and rinse
well. Or place beans in a saucepan with water of cover, bring to
a boil, remove from the heat , and soak for 1 1/2 hours, drain
and rinse well. Cook beans by covering with 2" of water,
simmering 1 to 2 hours or until tender depending on size of the
bean.
Flor
de Mayo Bean Relish
2 cups
dried Flor de Mayo Beans
16 cups water
2 cloves garlic, peeled
1 bay leaf
1 yellow bell pepper, diced
1 Anaheim chile, diced
1 English cucumber, diced
2 oz honey
2 oz olive oil
2 oz sherry vinegar
Salt and Pepper
Bring
beans, water, garlic and bay leaf to a boil and simmer until
beans are tender, about 2 hours. Add water as needed to keep
beans covered. Cool.
Sauté bell peppers and Anaheim chile quickly in olive oil. Cool.
Combine cooked beans, peppers and cucumbers with honey, olive
oil and sherry vinegar. Salt and pepper to taste.
Makes about 6 cups.
