French Green Lentil Side Dish
1 cup Petite French Green Lentils
2 cups chicken, beef or vegetable broth
2 Tbsp butter
Salt and Pepper to taste
Prepare Lentils: Rinse and pick over lentils. Place
lentils and broth in a medium saucepan. Bring to a boil, reduce heat
and simmer for 45 minutes, or until liquid has been absorbed. Remove
from heat and stir in the butter. add salt and pepper to taste.
serve piping hot. Use as a vegetable side dish or as a bed for meat,
fish, or poultry.
Variation: Saute 2 quartered and sliced leeks in 1/4 cup olive oil.
Mix into cooked lentils and season with salt and pepper to taste.
