Giraffe Beans
The
Giraffe is as popular in Africa as the pinto is in Mexico, and the
black bean is in Cuba. Giraffe are high in protein, fiber and folate.
Folate supports the production of red blood cells. The flavor
resembles black-eyed peas. Due to their small size (1/4) they are
relatively quick cooking.

Suggested Use:
The delightfully firm texture of these beans is perfect for cold
salads as well as hot dishes. COOKING
DIRECTIONS: Rinse and sort through beans, removing any unwanted
material. Soak overnight in cold water. Drain water from soaking
beans, add fresh water to cover by 4 inches and bring to a boil.
Cover, reduce heat to simmer and begin checking for doneness at
15-20 minutes. When tender, drain water and cover with cold water to
cool. Add to recipes as directed or any rice blends, broth soups,
fresh vegetables, cold salads or pasta.
