Triticale
(rhymes with daily) is a hybrid between wheat and rye. It has more
gluten than rye and more protein than either rye or wheat. The word triticale comes from the Latin words for wheat (triticum) and rye (secale).

recipes, it is best to combine it half and half with wheat flour
because its gluten is very fragile. Triticale can also be
rolled for use as hot cereal.
