A favorite
flour for pastries, cookies, waffles, pancakes and biscuits. It has
a lower gluten and protein content and therefore is not generally
used in making the typical loaf of bread, but may be substituted for
part of the main flour, especially if extra time is spent developing
the gluten and/or if flax meal is added (about 1 tablespoon per
loaf). It looks much like hard red wheat flour but has a milder
flavor. Milled by the unifine process, using
centrifical grinding and cool temperatures. This process offers less
destruction to the enzymes and does not disturb the oils as
traditional methods do. It provides the highest quality flour with
the longest lasting shelf life and consistently fine texture.
